Dear Customers,

Our dream was to harness the experience we acquired before the age of 30 in various gastronomic establishments in Belgium and abroad, and create our own cozy haven. That's why we selected a charming country villa called "VOL-VER" with a garden terrace in Marke-Kortrijk. The interior, adorned with rustic wooden beams, has been carefully preserved and revitalized. The black and white decor still exudes a welcoming ambiance, and the fireplace imparts a warm and inviting atmosphere during the winter months.

Our partially open kitchen is where we craft refined bistro dishes using fresh ingredients daily. We offer a delightful 3-course lunch menu, as well as a selection of suggestions and à la carte options for our guests to savor.

Vol-Ver is the epitome of Flemish charm, hospitality and good taste as the handsome brick walls and warm welcome from Sharon and chef Sébastien Verveken bear witness. The set and à la carte menus may seem low profile, but right from the first bite, you will taste the chef’s enthusiastic approach to cooking. Don’t go expecting eccentric gimmicks, however, as chef Verveken is more interested in subtlety and in harnessing his skill to showcasing familiar flavours, albeit with nods to Asia. For example, he may pair fresh langoustine confit with a heroic blend of horseradish sauce, bergamot jelly, seaweed and cucumber stock perfumed with dill oil. This uninhibited chef cooks boldly, but always in a bid to enhance the ingredient. The establishment’s decision to offer beer as well as wine pairings is truly inspired!

Sébastien Ververken has a record of success, having worked with top chefs such as Peter Goossens and Quique Dacosta. What's nice is that he and his partner Sharon De Volder bring the creations to the table, which creates a relaxed atmosphere. He starts from the very best products and bends them into classic but at the same time personal dishes in which you taste the craftsmanship of this chef. He combines crisp fresh langoustine with dashi, elderflower and basil. Not only does the plate look beautiful, the flavors and textures are 'spot on'. Even top are the combinations with Belgian beers for those who take a menu. To try.
